Scavenger Recipes: Pizza

This is what happens when we need to do groceries, but it’s snowing and slippery outside. It was very tasty–savory, sweet, and light.

You can modify this recipe to accomodate whatever you have in your fridge :)

Harvest Pizza

Preheat oven to 400०

Roll 1 container biscuit dough out to make a thin crust; place on lightly greased baking sheet (or use a Silpat as I did).

Render 2 strips bacon in a pan on medium-high heat (add extra virgin olive oil if needed to cook vegetables).

Toss in 1 diced small onion, half of a diced apple, 1 diced small sweet potato, 3 chopped frozen asparagus stalks, 1/2 cup frozen diced butternut squash, a pinch of thyme and sage, salt, and pepper. Cook until heated through and lightly brown. Do not overcook, as the veggies with lose their bite.

Drizzle extra virgin olive oil on the crust, then pile on your vegetables. Sprinkle with parmesan as desired.

Bake for 10-12 minutes
