Today, in Maine, it was 68 degrees outside. Which means it’s basically summer. In March.
This calls for a classy summery dessert, yes?
I’ll take the burden upon my shoulders.
Warning. This may be the easiest dessert you ever make.
Summer Fruit with Mascarpone Cream
1. Whip 1 cup heavy cream, 1 tsp vanilla, and 1/3 cup powdered sugar in a medium bowl, using a hand mixer on medium speed, to soft peaks.
2. Add 2/3 cup mascarpone cheese. Whip to stiff peaks on low speed. Do not over-whip.
3. Mound on top of fresh or thawed frozen fruit. I used fresh strawberries and a frozen tropical mix arranged in small martini glasses. If available, garnish with a mint leaf
4. Notes: If you like your cream sweeter, add more powdered sugar. You do not need to add sugar to your fruit. The natural sugars are beautiful. Let them shine through.
