Whipping Up Summertime

Whipped cream makes everything better.

FACT.

Mascarpone cheese makes everything seem more fancy.

ALSO A FACT.

Today, in Maine, it was 68 degrees outside. Which means it’s basically summer. In March.

This calls for a classy summery dessert, yes?

I’ll take the burden upon my shoulders.

Warning. This may be the easiest dessert you ever make.

Summer Fruit with Mascarpone Cream

1. Whip 1 cup heavy cream, 1 tsp vanilla, and 1/3 cup powdered sugar in a medium bowl, using a hand mixer on medium speed, to soft peaks.

2. Add 2/3 cup mascarpone cheese. Whip to stiff peaks on low speed. Do not over-whip.

3. Mound on top of fresh or thawed frozen fruit. I used fresh strawberries and a frozen tropical mix arranged in small martini glasses. If available, garnish with a mint leaf

4. NotesIf you like your cream sweeter, add more powdered sugar. You do not need to add sugar to your fruit. The natural sugars are beautiful. Let them shine through.
